Easy Matcha Chia Pudding

Matcha chia pudding is the perfect way to start your day. Not only is it easy to make, it is also packed with antioxidants, fibre and healthy fats.

Ingredients

  • 2 tablespoons of chia seeds
  • 1 teaspoon matcha powder
  • 200 ml (plantbased) milk
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons maple syrup or honey (to taste)
  • Yoghurt
  • Fresh fruit and toppings such as berries, granola, nuts or coconut flakes

Preparation

  1. Start by sieving the matcha powder in a small bowl to avoid any lumps. Then add a little warm milk (about 50 ml) to the matcha and stir well until the matcha is dissolved.
  2. In a bowl or glass jar, mix the chia seeds with the remaining milk, vanilla extract and sweetener. Also add the dissolved matcha and stir well so that the matcha powder is evenly distributed.
  3. Cover the bowl and put it in the fridge for at least 2-3 hours, or overnight. The chia seeds will absorb the milk and swell, making it creamy and pudding-like.
  4. Remove the matcha chia pudding from the fridge and give it a final stir.
  5. Serve in layers of yoghurt and chia pudding in a glass.
  6. Top it off with your favourite toppings, such as fresh fruit (like berries or banana), granola, nuts, coconut flakes or an extra drizzle of maple syrup/honey for some extra sweetness.
